Scrumptious Apple Muffins

My 6 year old requested I make these today and they are so easy and yummy, so why not! The last time we made these was on her birthday after I dropped her cake! ooooops :( But the muffins are so good she remembered them

This recipe is so easy and you can substitute oat flour if you want gluten free and replace the cow milk with almond milk, soy milk or another nut mylk if your choice if you want dairy free . I have not tried it with flax instead of egg so, if you do, let me know how they turn out.

Here is the recipe:

Scrumptious Apple Muffins

Ingredients

Dry:

1 3/4cups flour

1/4cup sugar

2 1/2 teaspoons baking powder(I use aluminum free)

3/4 teaspoon pink Himalayan salt

1/2teaspoon cinnamon

Wet:

1 well beaten egg

3/4 cup milk

1/3 cup oil (I used organic olive oil)

1 cup chopped apple (I leave peel on)

Topping:

2tbsp sugar mixed with 1/2 teaspoon cinnamon

Directions:

1. Mix dry ingredients in medium to large sized bowl

2. Mix wet ingredients in a separate medium sized bowl

3. Add all the wet ingredients to the dry ingredients

4. Stir until only just moistened

5. Fill your muffin tin (each cup 2/3 full...makes 12 muffins)

6. Sprinkle the unbaked muffin mixture tops with the Topping mix

7. Bake 17-20 minutes in a 400F preheated oven

Eat a few warm with butter and save the remaining few for lunches or snacks.
